#1) Choose the Right Wood

Wood significantly impacts flavor!

  • Mild woods like cherry and apple are perfect for poultry, pork, and fish.
  • Medium woods like hickory and oak are great for beef and pork.
  • Mesquite is the strongest wood offering the boldest flavor, usually best with beef.

You can mix and match, but don't overdo it. A little bit of wood goes a long way.

#2) Keep Temperatures Consistent

Consistency is the key to tender, flavorful meat.

Your Lone Star Grill is built with thick carbon steel walls to help maintain steady heat, but you’ll still need to learn to manage your vents to control airflow and temperature.

Also, avoid opening the lid too frequently — every time you do, you lose valuable heat and smoke!

#3) Learn to Love the Rub

#4) Keep Meat Moist

Long smokes can dry meat out. To combat this, spritz your meat with apple cider vinegar, apple juice, or water every 45–60 minutes after the first few hours of cooking.

#5) Let it Rest

Don’t skip this step! After cooking, wrap your meat in foil or butcher paper and let it rest for anywhere from 3 minutes to 2 hours depending on the size of the cut.
