#1) Choose the Right Wood

Wood significantly impacts flavor!

  • Mild woods like cherry and apple are perfect for poultry, pork, and fish.
  • Medium woods like hickory and oak are great for beef and pork.
  • Mesquite is the strongest wood offering the strongest flavor. Usually best with beef.

You can mix and match, but don't overdo it. A little bit of wood goes a long way.

#2) Keep Temperatures Consistent

Consistency is the key to tender, flavorful meat.

Your Lone Star Grill is designed with thick carbon steel walls to aid with this, but you also need how to learn how to manage your vents to control airflow and maintain a steady temperature.

By the same token, you should avoid opening the lid too frequently.

#3) Learn to Love the Rub

A good rub adds a flavorful bark to your meat and adds depth of flavor. Start with a simple base: salt, pepper, and garlic powder. Then, layer on new flavors and spices. Don't be afraid to experiment!

Whatever spices you choose, apply the rub generously and allow it to sit on the meat for several hours. You can even try letting your rub marinate your meat overnight to maximize flavor penetration.

#4) Keep Meat Moist

Meat can dry out during long cooks. Spritzing it with apple cider vinegar, apple juice, or water every 45 to 60 minutes after the first few hours of smoking can enjoy that tender, juicy flavor.

#5) Let it Rest

It's crucial to let your meat rest! Wrap it loosely in foil or butcher paper and let it rest 3 minutes to 2 hours depending on the size of the cut. Believe it or not your meat is still cooking during this time as the internal temperature will rise slightly during rest. Meanwhile, the juices will redistribute throughout the meat.

Cut too soon, and all that juice floods out of your meat and onto your cutting service, which means your guests don't get them!
