Innovative Grilling Techniques for the Modern Pit Master

Here are four that you should consider trying. 


#1) Plank Grilling

Using a wood plank helps you infuse your meat with the taste of wood smoke. You can find planks in a variety of woods, including cedar, alder, hickory, red oak, maple, cherry, and more.

To use them, you should first soak the plank in warm water, wine, or apple cider vinegar to bring out even more flavor. Then cover the plank with the food and place it on the grill. Cook as normal, then either discard the plank, or use it as a serving plate. 


#2) Salt Block Grilling

You cook with a salt block much like you cook with a plank. The idea is you're going to get a Himalayan salt block and you're going to cook your meat atop the block to infuse the meat with a complex salt flavor. 

To use salt block grilling, first ensure the block is dry. Place the block a half inch away from direct flames. Then, pat your meat dry with a paper towel and season it as desired. Preheat the block until it reaches your desired temperature, then place your food on the preheated block. 

You can serve the food directly on the salt block. 



#3) Reverse Searing

If you've ever struggled to get the inside of your steak just right, then reverse searing is the perfect technique to learn.

Start by cooking your meat at low until you bring it up to your ideal internal temperature. Rare steak should be at 120 degrees to 125 degrees. Medium rare steak should be at 130 degrees to 135 degrees. Medium steaks should be at 140 degrees to 145 degrees. Medium well steaks should be at 150° to 155°. Well done steaks should be at 160° to 165°. 

Once you've reached the right temperature, let the steak rest for 10 minutes while you bring your grill up to a very high temperature. Then, cook for 1 to 2 minutes per side to add the grill marks, and serve. 


#4) Sous Vide Grilling

Sous Vide steak gives you another way to control the doneness of your food. Start your sous vide water bath and bring it up to the desired temperature. 

Season your meat and then add it to the sous vide cooker. Add aromatics to your bag and seal it. Then drop the bag into the water bath. When the meat is ready, you can place it on a paper towel-lined plate. Pat it dry.

You then finish the steak on the grill to get it browned, to add the crust, and to add the grill marks we all know and love. Don't forget to get the edges!
