Secrets of the Perfect Rotisserie Chicken

Now, follow these simple steps to ensure you get the perfect rotisserie chicken every time.

#1) Manage the Heat

You want the right and left sides of the grill to heat low and even. Rotisserie should be cooked on indirect heat; the idea isn't to blast the fire as high as it will go but rather to allow the heat to build evenly. 

Pile your charcoal at the back of the grill and let the sides stay just a little bit cooler. You want the heat on the grill to reach 375℉.

#2) Use a Drip Pan

A drip pan ensures fewer fat flare-ups in your fire. You can use a basting brush to coat the drippings every twenty to thirty minutes, which will make your chicken juicy and tender. 

#3) Prep Properly

Remove excess fat—rotisserie already produces a lot of grease, and you don't want to add more. Tie your chicken tightly with twine to ensure an even distribution of heat as it turns on the spit. 

Season with olive oil and any herbs and spices you choose. Here are a few you can try.

#4) Take Your Time

Expect rotisserie chicken to take up to an hour and a half. It's a slow cooking method. 

Use a meat thermometer to ensure the chicken has been cooked all the way through. It should have an internal temperature of at least 165℉.

Once you remove the chicken from your spit, you should let it rest for at least 15 minutes. 

#5) Experiment With Other Meats 

While chicken is the rotisserie most familiar to most people, almost any type of meat can be roasted on the spit to form the tender, flavorful centerpiece of a lovely meal. 

Try experimenting with beef, lamb, or turkey to get some variety in your rotisserie bakes.
