The Role of Steel in BBQ Pit Construction: Why Material Matters

 

Here at Lone Star Grillz, we build every BBQ pit with two kinds of high-quality steel: 10 gauge carbon steel for the main body and fireboxes of our smokers, and stainless steel for corrosion-resistant grates, gauges, handles, and door coverings.

But why does material matter so much? Why would you, the home grill chef or even the dedicated competition pit master, care about what your pit or smoker is made of? Aren't all BBQ pits made of steel?

All Steel is Not Created Equal

Steel is an alloy family, and within this family there is a lot of variance in quality and fitness for pit creation. Some pits on the market are made of basic mild steel. They're inexpensive, but they require a lot of maintenance and don't last very long.

Besides, imagine trying to maintain a consistent 225℉ for a 12-hour brisket in a pit made of thin, low-grade steel. The temperature fluctuations would be a real headache. Uneven cooking and potentially ruined meat would be real risks. With the high-quality carbon steel we use, you get stability, consistent heat, predictable results, and less stress. 

Stainless steel is another cheap pit choice. It offers some durability in outdoor environments, but it fails to hold heat as well as carbon steel does. A good thick piece of carbon steel will hold heat as long as you need it to and will produce a fair superior cook, so long as you're willing to season it properly. 

What makes carbon steel so much better?

Carbon steel's density and thermal conductivity allow it to absorb and radiate heat evenly. This translates to cooking temperatures that are consistent across the entire surface. Thinner materials create hot and cold spots that are difficult to manage. Carbon steel doesn't, which is what makes it such a boon to competition grill chefs.

The thickness in the steel also plays a huge role in thermal mass—the ability for any material to absorb and store heat. Thicker steel holds more heat, so outside temperature fluctuations can't mess with your meat. 

Carbon steel can even influence the flavor of your food. When it's properly seasoned, it develops a patina that enhances smoky flavors. 

Quality Beyond Materials

The quality of the welds is just as important as the quality of the steel. A poorly welded pit is prone to leaks, which can disrupt airflow and temperature control.
