Lone Star Grillz Fire-Kissed Corn Salad
Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.
Recipe and Ingredients:
- 5-6 Fresh Corn Cobs
- 2 Tbsp. Olive Oil
- 1 cup Chopped Red Bell Pepper
- 1 cup Chopped Orange Bell Pepper
- ½ cup Chopped Sweet Onion
- 1 cup Chopped Tomato (gutted)
- LSG “South of the Border Rub” or your favorite Rub
- Optional garnish of Dried Chives or Parsley
- Optional dash of Red Wine Vinegar added to final mix (if storing for a few days before serving)
DIRECTIONS:
- ALWAYS START BY WASHING YOUR HANDS PRIOR TO PREPARING ANY FOOD FOR FOOD SAFETY.
- Begin by de-husking, rinsing and allowing Corn to dry.
- Brush entire surface of Corn with Olive Oil.
- Season with LSG South of the Border or your favorite Rub.
- Light small-medium sized fire in your LSG Santa Maria Grill (or whatever grill you have)
- Once pre-heated, place corn on grill, turn and rotate as needed over direct heat.
- Cook for approximately 20-30 minutes until corn begins to develop color, tenderness and char to your liking.
- Remove corn from grill and rest in foil for 15 minutes to allow it to fully tenderize.
- Cut corn off cob and place it into a mixing bowl.
- Add chopped red/orange bell pepper, onion, tomato, Rub (and optional red wine vinegar), mix well.
- Garnish with Parsley or Dried Chives.
- SERVE AND ENJOY!
