Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.
Recipe and Ingredients:
- 2 lbs. of your favorite Hot Dog (we used high quality all beef)
- 2 tbsp. Yellow Mustard
- LSG “Texas Bold Rub” or your favorite BBQ Rub
- 1 small sliced or diced Onion
- ¼ cup Brown Sugar
- 4 tbsp. Butter
- ½ cup of your favorite BBQ Sauce
- A few drops of your favorite Hot Sauce
- Dried Chives for garnish (or whatever you prefer)
DIRECTIONS:
1) Place Hot Dogs into a foil pan or any type of bowl large enough to mix/coat. If you use a foil pan, you can re-use it during the caramelization step.
2) Cover Hot Dogs with some mustard, coat with LSG Texas Bold Rub generously, mix with hands to coat and cover completely.
The Cook: Approximate time 2 hours total
Preheat your Lone Star Grillz Pellet Smoker to 225 degrees Fahrenheit. Place hot dogs on main grate and be sure to give them space in between for smoke to travel which will help form a good exterior texture.
Allow to smoke for around one hour, then transfer the hot dogs back into the foil pan, add diced/sliced onion, brown sugar, butter pads, BBQ sauce, hot sauce.
Mix well to coat and place back on the smoker uncovered to caramelize, you will want to increase the smoker cook temperature to 300 degrees Fahrenheit at this time. Allow approximately one hour to caramelize or until it’s to your liking.
Remove from the smoker, allow a few minutes to cool, SERVE AND ENJOY with your favorite garnish!
