Lone Star Grillz “Pig Shots”

Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.

Recipe and Ingredients: (this makes 12-15 “Pig Shots”

- Your favorite Smoked Sausage
- ½ package of Thick Cut Bacon of your choice (sliced into half length)
- 1 Package of Cream Cheese
- 2 tablespoons of your favorite BBQ Rub/Seasoning
- ¼ cup of your favorite Shredded Cheese
- Your favorite BBQ Sauce
- Jalapeno Slices

DIRECTIONS:

1) Mix BBQ rub and shredded cheese into the cream cheese. Mix well and set aside.
2) Slice smoked sausage into ½ thick portions with flat edges.
3) Wrap each piece of smoked sausage with bacon at the base using a flat surface, this will leave a pocket of open space on top fill with cream cheese (see video).
4) Transfer cream cheese into a Ziplock or re-closable bag, clip off a small corner of the bag with scissors and slowly squeeze the bag to fill each Pig Shot with cream cheese.
5) Top each with a jalapeno slice.

The Cook:

Pre-heat your Lone Star Grillz Pellet Smoker to 275 degrees Fahrenheit. Once pre-heated, place Pig Shots on the cooker. Allow them to cook for approximately one hour or until the bacon is done to your liking. Top each Pig Shot with some BBQ sauce, allow to cook for 10 more minutes, remove and
allow to cool. SERVE AND ENJOY!
