Lone Star Grillz “Smoked Meatloaf”

 

Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.

Recipe and Ingredients:

- 3 lbs. 80/20 ground beef
- 1 Tbsp. Worcestershire Sauce
- 1 large finely diced onion
- 3 cloves of garlic (chopped)
- 1/2 cup dried or fresh parsley
- 1.5 cups of Italian breadcrumbs (panko or regular)
- 2 eggs
- 1/2 cup parmesan cheese
- 1/2 teaspoon of oregano
- 1.5 tablespoons of Lone Star Grills “LSG Texas Fusion” OR 1 tablespoon EACH of salt and pepper
- Your Favorite BBQ Sauce or Ketchup Brand

PREP DIRECTIONS:

1)     Place ground beef, Worcestershire sauce, onion, garlic, parsley, breadcrumbs, eggs, parmesan cheese, oregano, LSG Texas Fusion (or alternative) into large bowl for mixing.  Mix well using twist and fold technique until fully combined.  When the mixture sticks well to your hand/glove, it is ready to go.

2)     Use a large enough Meatloaf Pan and line it with plastic wrap inside leaving plenty of excess outside of the pan, place meat into pan and gently press down firmly enough so that the meat can take the shape of the pan.  Be sure to get the top (which will become the bottom) as flat as possible for presentation and even cooking.

3)     Gently flip the meatloaf over onto the center or a warming rack (for easy transport), remove pan by sliding it off slowly, then remove plastic wrap.

4)     Season the outside of the meatloaf with a light coating of LSG Texas Fusion (or alternative).

5)     Place in freezer or cold fridge while you preheat your grill to keep shape and solidify (roughly 30 minutes is fine).

The Cook: Approximate time 3 hours total

Preheat your Lone Star Grillz Pellet Smoker to 325 degrees Fahrenheit.  Place Meatloaf (with warming rack) onto smoker and insert a Fireboard Temp Probe to monitor temp.   Allow it to cook for approximately 90 minutes-2 hours for the meatloaf to hit 130 degrees Fahrenheit in the center.

Glaze outside with your favorite BBQ sauce or Ketchup, close lid and continue cooking. Once the Meatloaf hits 155-160 degrees Fahrenheit in the center, remove and rest for 10-15 minutes.  It will continue to rise in temperature during rest. Now SLICE, SERVE, AND ENJOY!
