Lone Star Grillz Spicy Fire Wings
Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.
Recipe and Ingredients:

3 pounds of Party Wings (Flats/Drums)

2 Tbsp. Olive Oil

LSG “Texas Bold” Rub (or your favorite Wing Rub)

2 cups of Ketchup

½ cup Apple Cider Vinegar

¼ cup Brown Sugar
-
¼ cup Worcestershire Sauce
-
2 Tbsp. Honey
-
1 Tbsp. Minced Garlic
-
1 Tbsp. Coarse Black Pepper
-
2 Tsp. Cayenne Pepper Powder

¼ cup of your favorite Hot Sauce
DIRECTIONS:
ALWAYS START BY WASHING YOUR HANDS PRIOR TO PREPARING ANY FOOD FOR FOOD SAFETY.

Make Fire Sauce: In a small pot, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, honey, garlic, black pepper, cayenne and hot sauce. Mix and stir over medium heat for 10-15 minutes. Remove from heat and set aside (or refrigerate if not using right away).

Place Wings in a large bowl, add olive oil and rub, mix to coat well.

Pre-heat your Santa Maria Grill with a medium sized fire (we used oak/hickory wood). If you’re using a traditional grill, aim for 350-400 degrees Fahrenheit.

Place wings on grates and turn/move as needed as well as raise/lower Santa Maria Grill Grates to add/reduce heat over direct fire.

Once the Wings hit 180 degrees Fahrenheit in the deepest, coolest part of the center, remove and place into a large bowl, add half your batch of Fire Sauce, mix well and return to grill over direct heat to caramelize.

Grill for another 5-10 minutes or until sauce caramelization occurs.

Remove from grill, SERVE AND ENJOY! (Don’t forget the extra Fire Sauce for dipping if you have the courage!)
