Lone Star Grillz “Ham w/Smoky Glaze”
Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.
IMPORTANT NOTES:
-
This recipe is done with a PRE-SMOKED/COOKED HAM. Be SURE to use the same or it must be cooked to a safe temperature of 165 Degrees Fahrenheit whereas a pre-smoked only must be re-heated to a 140 F Temp.
Recipe and Ingredients:
-
Pre-Smoked Spiral Cut Ham
-
LSG Texas Bold Rub (or your favorite Ham Rub/Seasoning)
-
For Glaze: 1 cup Brown Sugar, 1/3 cup Honey, 1/3 cup Orange Juice, 2 tablespoons Apple Cider Vinegar, 1 tablespoon Dijon Mustard, 1 teaspoon Cinnamon, ½ teaspoon Black Pepper, ½ teaspoon Garlic Powder, OPTIONAL 1 teaspoon Crushed Red pepper for heat, a few shakes of LSG Texas Bold (or your favorite seasoning for Ham). Mix well in a grill/smoker safe pot as we are putting it on the smoker.
DIRECTIONS:
ALWAYS START BY WASHING YOUR HANDS PRIOR TO PREPARING ANY FOOD FOR FOOD SAFETY.
-
Pre-heat your smoker to 275 Degrees Fahrenheit.
-
Unpackage Ham and place on a rack on tray (to keep it elevated during the cook).
-
Season generously with LSG Texas Bold (or your favorite Ham Seasoning).
-
Place Ham on smoker (indirect heat) and monitor with a temp probe.
-
Make Glaze (instructions above)
-
Place Glaze Pot on Smoker indirect when Ham hits 90 degrees Fahrenheit to warm up and allow it to get some smoky flavor.
-
Glaze Ham when it hits 120 degrees F and again when it hits 130 degrees F, then turn the cook temperature up to 325 degrees Fahrenheit to finish and caramelize.
-
Remove Ham when it hits 140 Fahrenheit (assuming it’s a pre-cooked Ham).
-
Rest under foil for approximately 20-30 minutes.
-
Slice, serve and ENJOY with all your favorite sides!
