Lone Star Grillz “Steak Bites w/Hot Honey Garlic Butter Glaze”

Tender steak cubes are lightly smoked to build wood-fired flavor, then seared over high heat and tossed in a sweet and savory hot honey garlic glaze. Recipe and Ingredients: 

  • Ingredients

  • 3-4 lbs. sirloin steak, cut into 1.5-inch cubes

  • 1 tbsp avocado oil

  • LSG Texas Bold Rub (or your favorite steak rub)

  • Hot Honey Garlic Glaze

  • 1 stick butter

  • 6 cloves garlic, minced

  • ½ cup honey

  • 2 tbsp hot sauce

  • 1 tbsp LSG Texas Bold

  • 2 tbsp Worcestershire sauce

  • Pinch red pepper flakes (optional)

  • Garnish

  • 2 green onions, sliced

  • Sesame seeds (optional)

  • Jalapeño slices (optional)


Directions

  • Make Glaze by combining all ingredients in a smoker safe pot/pan.

  • Preheat your grill or smoker to 225-250°F.

  • Toss steak cubes with avocado oil, then season generously with LSG Texas Bold.

  • Arrange steak bites on a wire rack and smoke for 20-30 minutes, or until they reach approximately 90-110°F internal temperature.

  • While the steak is smoking, place glaze pot on top shelf to melt/heat, and light a chimney of charcoal to prepare for the sear.

  • Preheat a cast iron skillet over high heat.

  • Sear steak bites for 60-90 seconds per side until a crust develops.

  • Reduce heat slightly and add the glaze. Toss steak bites continuously until coated and glossy, about 1-2 minutes.

  • Cook to a final internal temperature of 130-135°F for medium rare or 140°F for medium.

  • Transfer to a serving platter and garnish with green onions, sesame seeds, and jalapeños.

  • Serve immediately and enjoy.
