Lone Star Grillz “Birria Beef Bites – El Fuego Trio”
These smoked birria beef bites combine the rich Chile flavor of birria with real wood-fired BBQ character. Large chunks of seasoned chuck roast smoke above a Dutch oven filled with the birria ingredients, allowing all those beef drippings to fall directly into the broth while the chiles and vegetables soften. Everything is then blended into a rich sauce before the smoked beef is covered and braised until incredibly tender.

Recipe and Ingredients:

Fresh Chuck Roast 3 to 4 pounds in size

Lone Star Grillz “Texas Fusion” & “South of the Border” Seasonings (or use your favorite)

Olive Oil to coat Beef
-
5 dried Guajillo Chilis, stems and seeds removed
-
2 dried Ancho Chilis, stems and seeds removed
-
3 Roma Tomatoes, quartered
-
1 large white Onion, quartered
-
6 Garlic Cloves, peeled
-
1 Chipotle Pepper in Adobo sauce
-
4 cups of Beef Broth
-
2 tsp. Mexican Oregano
-
1.5 tsp. Ground Cumin
-
¼ tsp. Ground Cinnamon
-
Kosher Salt & Black Pepper (to taste)

Serve with Tortillas, Onion, Lime, Consommé’ from Dutch Oven, Rice, Beans or anything you like
DIRECTIONS:
ALWAYS START BY WASHING YOUR HANDS PRIOR TO PREPARING ANY FOOD FOR FOOD SAFETY.

Trim the chuck roast as needed and cut it into approximately 1½–2-inch bites.

Place the beef bites into a large bowl, drizzle with a little olive oil, and season generously with LSG Texas Fusion and South of the Border seasonings or use your favorite beef rub.

Toss well to evenly coat the beef and set aside while you prepare the birria base.

In a large Dutch oven or other grill-safe pot, combine the guajillo chiles, ancho chiles, Roma tomatoes, onion, garlic, chipotle pepper, beef broth, Mexican oregano, cumin, cinnamon, and salt and pepper to taste.

Place a warming rack over the Dutch oven and arrange the seasoned beef bites on the rack. Position as much of the beef as possible directly over the Dutch oven so the rendered fat and juices drip into the birria mixture below.

Preheat the Lone Star Grillz El Fuego Trio, or your smoker, to 250°F. Once fully preheated, place the Dutch oven and rack of beef into the cooker. Close the lid and smoke for approximately 2–2½ hours, or until the beef has developed a nice bark and the chiles and vegetables have softened.

Remove the softened chiles, tomatoes, onion, garlic, and chipotle from the Dutch oven and transfer them to a blender. Add approximately 1 cup of the hot beef broth from the Dutch oven and blend until smooth.

Remove the warming rack and place the smoked beef bites directly into the Dutch oven. Pour the blended birria mixture back over the beef and stir well. Cover the Dutch oven and continue cooking for approximately 2 hours, or until the beef bites are tender and probe easily.

Remove the Dutch oven from the cooker and allow the beef to rest for approximately 30 minutes. Serve the birria bites however you like—as a bowl with rice and beans, or use them to make birria tacos, burritos, tostadas, and more.
