Lone Star Grillz “Garlic Rosemary Chicken”
Remember to always wash your hands prior to preparing. Use food grade gloves where appropriate to prevent contamination.
Recipe and Ingredients:
- 1 Whole Chicken (Fresh, ours was around 6 pounds)
- 1 stick of partially melted Unsalted Butter
- 1.5 Teaspoons of Dried Rosemary
- 1 Teaspoon of Garlic Powder
- ½ Teaspoon of Sage
- Lone Star Grillz “Texas Fusion” Rub
DIRECTIONS:
-
Make Compound Butter Rub: Mix partially melted butter, Dried Rosemary, Garlic Powder & Sage in a bowl, set aside to allow to firm up slightly.
-
Setup your Lone Star Grillz Smoker to run at 250-275 degrees Fahrenheit.
-
Prepare the Chicken by unpackaging, removing any packages from the cavity (if needed), and removing the backbone using kitchen shears (as seen in video).
-
Pat the entire surface dry on both sides with paper towels.
-
Apply the Compound Butter Rub generously to all surfaces on both sides, be sure to cover completely.
-
Season the entire outside (both sides) with our Lone Star Grillz “Texas Fusion” Rub.
-
Place the Chicken on the Smoker and allow it to cook while managing your fire occasionally to maintain the 250-275 Fahrenheit Temperatures.
-
The cook will take 2.5-3 hours on average, but you can start taking temperatures around the 2 hour mark (remember this is a 6-pound Chicken so adjust accordingly to your cook).
-
Once the Chicken hits 160-162 degrees Fahrenheit, remove from the smoker and allow to rest for 5-10 minutes.
-
Slice, serve and ENJOY it with your favorite sides!
